A few days before, the sheep were brought from all over Anatolia to the gates of the cities, parked on vacant lots and marked with henna. The animals are slaughtered on the day of the feast, upon return from the mosque. After the sacrifice, we eat a dish of pieces of mutton returned in their fat, the kavurma. Leftovers are distributed to the poorest ... or to neighbors.
